I'll start.. This was my 4am snack...
Salmon w/Bacon, Elbows... Spinach, Shitaki mushrooms, Ginger & Scallions w/ Garlic

OMG that looks amazing!!! I'm cooking salmon tonight! And I have bacon and mushrooms, hmmm...

I LOVE to cook! Everyone laughs at me that I still love to cook for hubby and myself, they say that desire has left them. My favorite thing to cook is risotto...cheesy, slow cooked rice with basically any kind of seasoning/vegetable added.

I enjoy cooking, was brought up to love food! I like to cook asian, my stir fry is pretty good and I make a yummy homemade wonton soup (even the noodles are homemade)... My wok gets alot of use <img src="i/expressions/face-icon-small-smile.gif" border="0"> I also love to make desserts, anything from homemade carrot cake to chocolate moose munch (a delicious caramel pop corn treat).

Next time I make something, I will post pics and recipes<img src="i/expressions/face-icon-small-smile.gif" border="0">

This is my lunch today. (I won't eat the whole chocolate bar, and what I do eat will probably be around 2 pm. Okay, I lied, I just ate some while resizing my pic.)
Check out the almost identical plate design and counter with Incomudrux's. Spoooooky.


Lentils: boil a bag of pink lentils in water (an inch plus of water over the top of the lentils), lots of shakes of Turmeric, some red pepper flakes, some chopped garlic, some dried coriander, ginger and salt. Add more water if it seems to boil off before the lentils are soft.
This keeps in the fridge for up to two weeks.
Carne Asada: Trader Joes's vaccuum sealed premarinated meat, cook on grill if you can.
Rice: bring 3 cups of water to a boil, dial down stove to low-simmer, add two cups of rice, cover, set timer for 25 minutes. The end. Substituting some of the water for coconut milk is incredibly yummy.

Chicken Vindaloo:
1. 2-3 boneless, skinless chicken breasts
2. 3 bell peppers (I use red orange and green ususally)
3. 1/2 onion thinly sliced
4. Curry paste (usually found in the ethnic food section. I get mine at a store that sells only Indian food items)
5. 2 tbsp turmeric
6. 2 tbsp cayenne (can be skipped if you dont like it as hot)
7. 2 tbsp Garam Masala
8. 1 clove garlic, minced
9. 1 tsp ginger paste
10. 1 cup basmati rice

Cube chicken breasts and pan fry with olive oil, garlic and ginger paste (taking care the paste does not burn). In a seperate pan (cast iron if you have it) heat olive oil to high temperature and sear the onions and peppers. The onions should begin to caramelize.
In a large pot, combine peppers/onions and the chicken with the curry paste (depending on what kind you buy you may need to add a bit of water). Stir in the spices and simmer on low for about 30 minutes.
Prepare the basmati rice. It's best to soak it in cold water for 20 minutes, drain, and then boil for 8 minutes. After the rice is cooked rinse it with boiling water and serve with the curry immediately.
This dish requires a good bit of prep, but it will easily serve 5 and is insanely delicious. Vindaloo is fairly spicy, however there are many different types of curry (curry in India is essentially gravy to us). Tikka Masala is pretty mild as is Rogan Josh. Jalphrezi is medium heat. Personally, I like mine 5 alarm hot.

Wonder if curry paste is gluten free? That looks so good! Will have to check that out, if I can make that gluten free!

The curry was from earlier. Dinner tonight was:
Grilled chicken wrap with peanut saytay.
1. tortilla (wheat)
2. Spring greens
3. bean sprouts
4. peanut saytay sauce (or ranch or hot sauce or guacamole)
This one is easy. Grill a thinly sliced boneless skinless chicken breast cut into strips and add greens sprouts and sauce. Enjoy!

Jonathan, Your Chicken Vindaloo looks great. Do you use chicken breasts rather than thighs for a particular reason? My husband likes dark meat--says it's more moist and flavorful--so I buy the boneless/skinless thighs. I was also under the impression dark meat has more fat, more protein too? Anyway, I think you need to buy the same dinnerware as me and Frank.<img src="i/expressions/face-icon-small-smile.gif" border="0">Mamerth, If you're trying to resize in Photobucket, it doesn't seem to update the size when you "Save and Replace," but if you "Save As" and make a new file name, the resizing works. That's at least what stumped me for a while. How are you doing these days with all that pulmo rehab working out? I hope you are less sore.

YUMMY!!! I dont have a pic of it yet, but tonight's dinner will be lamb chops, baked potato, fresh asparagus from the garden, baby beets, and salad. Fruit juice popsicles for dessert. Skim milk for the kids and mint tea for me!

I prefer the breast, but you can use thighs(most Indian restaurants do), you can also substitute lamb or shrimp.

Just going to throw it out there that this thread is making me starving.
My meals today have consisted of half a Starbucks panini and a tuna fish sandwich...it's finals week and I'm out of food. :/
