Anyone Gluten-Free???

We are starting the process and just wanted to know if anyone found items that worked well in our high calorie/fat world.
Both boys definitely have issues with gaining weight, so I don't want to jeopardize their health in this..

Whenever flour is called for in a recipe I use rice flour. But, it tends to be grainy, so I make my own mixture of rice flour and tapioca flour. I don't have an exact ratio, but I use a five pound container and fill it almost all the way with the rice flour and just put a cup or two of the tapioca in it. I hope that's the kind of thing you're looking for, when I think gluten-free I'm thinking wheat. I also use Ezekiel sprouted wheat bread instead of regular bread, lot's of protein in that stuff! Try Mary's Gone Crackers too. They're delicious with cream cheese.
