High Calorie Foods.. what do you feed your kids?

Just wondering what other parents feed their little ones. Alysa is almost 3 (on the 28th) and I am having trouble getting her to eat. It is at the point where her team has her drinking 2 or 3 pediasures a day (which she loves).

Any ideas? I know about adding butter and cheese and stuff but does anyone have any other ideas or recipes that I could snag?

Also.. if you are cooking high cal meals for your kids how do you keep yourself at a healthy calorie count for you. I am a tiny person so I am not worried about the weight gain but eventually all these calories will catch up to me.

Have her eat spoonfuls of nut butter. My son and I don't have issues keeping weight on but my friend's cf daughter does and they do this first thing in the morning...talk about breaking the fast. And quantity wise it won't fill her up. She'll still have room for breakfast in her tummy.

Preferably one other than peanut butter since pb causes inflammation. Almond or cashew are very tasty. Sesame is good too. If she can't eat it just on a spoon figure out a vehicle by which she'll enjoy it...celery, graham cracker, small wedge of eggo waffle, what ever she enjoys really. Remember it doesn't need to sound good to you. This is high fat and high protein - exactly what she needs.

SOmething I always loved when I was little was corn meal mush. My mom would add eggs to it to make it more nutritious and also to get eggs in me b/c I didn't like them plain.

I also like custard alot. Whenever I need to gain weight I make a big batch of egg custard with whole milk or if I really want it rich I make it with coconut milk. Sooo good (and good for her) and sooo caloric/fattening.

DS has always liked yogurt -- I try to buy the whole milk or greek style. If he asks for a glass of milk, I sneak in a dash of cream. Noodles, casseroles, spagettios, I'll sneak in a dash of olive oil. If he can see it though -- butter, etc. on a sandwich then he'll refuse to try it.

Instead of pediasure, we do carnation instant breakfast made with whole milk & cream. I know a local family who struggled with pediasure and switched to carnation VHC (very high calorie)

He tends to like sunflower nuts and peanuts, so I let him snack on those.

We struggle because he's SUCH a picky eater that it's very hard to get him to try new things. He's not one for high calorie/high fat treats or snacks. He doesn't care for dips or sauces. He does seem to like parmessean (sp) and mouse (swiss) cheese "with holes".

Both of our kids eat Pancake on a stick (pancake wrapped in sausage) for breakfast. Not my cup of tea, but they love it.
