My son is almost three with the same kind of oral sensory issues. From a CF standpoint one thing that has really helped is the high calorie milk drink we make him. Because it's basically just milk there is not a texture issue for him and we know that he will usually drink a full sippy cup (9oz) at each meal. Then we try to present something that we know he will probably eat and something that we would like him to eat. We don't worry about if he doesn't eat a lot of solids at any particular meal because we know he's getting the calories from the milk. He also seems to self regulate his calories with this method. If he has a food that he likes and has no problems eating he tends to eat a lot of it with out reaching for his milk until the end of the meal or sometimes not needing to finish it. If he looks at his plate and knows he is going to have a hard time he reaches for his milk right away. It's nice because we don't have to be too involved in telling him what and how much to eat so that he doesn't realize how important it is to us.
The milk drink we give him is a combination of whole milk (about half the sippy cup) and about 3/4 packet of vanilla instant carnation and 1/2 and 1/2
