Thanks everyone for your replies.
I called the CF clinic yesterday and the doc said to go ahead and start giving him a full capsule. We started doing that yesterday and today he went from 8 until almost 1 before he wanted to eat again.
Liza - I didn't know they had trouble stooling if they had too many enzymes. Parker will go a day or a day in a half before going sometimes, but so did my son w/o CF, so I thought this was ok?
It's nice to know how many capsules your little ones were taking at this age. Even thought every child is different, it still gives me a little bit of a timeline - thanks!

Our doctor assured us that giving too many enzymes wasn't a problem. They'd have to have a SIGNIFICANT amount of enzymes for it to be an issue. Mainly there could be problems with the enzymes/stool causing a sore red monkey butt.

It was more of a matter of his not going for several days, slowing down on his eating and getting a little backed up. So we'd end up giving him some milk of mag (as per his doctor) and things would be fine. May have been something as simple as his not eating as much. The preschool director's theory when it was at it's worst was that he was being a poop holder. Maybe didn't like the way it felt when he stooled.

Hindsight (forgive the pun) there were probably times when we should've been giving him more enzymes and didn't -- early one when he'd stool two or three times DURING diaper changes. Bleah, when we were still trying to figure out how many enzymes to give him.
