My daughter, with CF, went from being pescatarian to vegetarian to vegan, and is doing well. (It's all for ethical reasons.) She will eat eggs that come from ethically raised chickens, which are available at Whole Foods. Once she became a vegan, she started seeing a nutritionist to make sure she was meeting her nutritional needs, which has been reassuring for all of us. Going from vegetarian to vegan actually improved her nutrition because she was just eating a lot of cheese in place of meet. Now her diet is more varied. The big challenge, she says, is to not rely on vegan packaged foods to much. Luckily, she loves to cook.
