I don't know if you see the nutritionist at the regular check-ups (we do) but they always want to know what ds has been eating and want us to tell them what he eats in a typical day. Also, the doc wants poop information...what it looks like, how often, any changes since last appt, etc. but it sounds like your child is pancreatic sufficient so you may not have to deal with all of this. Even though our son rarely coughs, our docs want to know how many times he may have coughed in the last 3 months, etc.
