PASTA POT RECIPE

2 pounds ground meat
2 meduim onions, chopped
1 clove garlic, minced
1(14 ounce) jar spaghetti sauce
1 (16 ounce) can stwed tomatoes
3 ounces canned or fresh mushrooms
8 ounces shell or spring macaroni
3 cups sour crem
8 ounces Provolone cheese, shredded
8 ounces Mozzarella cheese, shredded

Cook beef in skillet, drain excess fat. Add onions, garlic, spaghetti sauce, stwed tomatoes and mushrooms. Simmer 20 minutes. Meanwhile, cook macaroni according to package directions; drain and rinse in cold water.

Pour shells in deep casserole cover with tomato meat sauce. Spread sour cream over sauce and add provolone cheese. top with mozarella cheese. Cover casserole and bak at 350 degrees for 35-40 minutes. Uncover and bake until cheese melts and browns.

yield: 10 servings

This recipe is called Puppy Chow.

1 stick (1/2 cup) butter
1 ( 12 ounce) package chocolate chips
1/2 cup peanut butter
8 cups Rice Chex or Crispix cereal
2 cups powdered sugar

Melt the first 3 ingredients in a meduim saucepan. Place the cereal in a large plastic container and add the melted mixture. Shake sealed container until the cereal is coated. Add the powdered sugar.

Yield: 12 servings
1/2 recipe: 500 calories

Spinach Pasta

1/2 cup vegetable oil
1 tablespoon butter
1 teaspoon salt
1 teaspoon basil
2 cloves garlice, halved
1 package frozen spinach, cooked
1/2 pound small shells, cooked and drained
1 ( 6 ounce) can grated Parmesan cheese

Saute first 5 ingredients; add cooked spinach. Mix well. Saute for 7-10 minutes. Add cooked pasta and then th eparmesan cheese. Stir until pasta is cpated; heat throughly. Serve hot

yield: 6 servings

Fruit Pizza

1 package yellow cake mix
1/4 cup water
1/4 cup margarine, softened
2 eggs
1/4 cup packed brown sugar
1/2 cup pecans, chopped
2 packages Dream Whip
fresh fruit

Grease and flour two 12" pizza pans. Combine half the cake mix and all other ingredients except the pecans, fruit, and dream whip. mix well. add remaing cake mix and mix well. fold in nuts. divide evenly between the 2 pans and spread to the edges. Bake at 350 degrees for 15-20 minutes. cool. prepare dream whip according to directions on package. top each cake with one package of dream whip and add sliced fresh fruit to decorate.

yield: 12 servings

I have some doozies for high fat food. They are sooooo good though, I warn the non-cfers trying these, you'll get fat lol.

Monte Cristo sandwiches

vegetable oil
12 slices white bread
8 slices Gruyère cheese
1/2 lb. sliced cooked ham
1 Tbs. plus 1 tsp. prepared mustard
1/2 lb. sliced cooked chicken breast
toothpick
4 eggs, beaten
3/4 cup milk
Heat oil in an electric deep fryer to 400°F. Place a slice of cheese on a slice of bread and top with ham slice. Spread with mustard and top with another piece of bread. Cover with another slice of cheese, chicken and last piece of bread. Cut triple decker sandwich into quarters and secure with toothpicks. Combine egg and milk in a bowl. Dip sandwich quarters into egg mixture, coating all sides. Deep fry 3-4 minutes until golden. Drain on absorbent paper. Remove toothpicks before serving.

Makes 4 sandwiches. 792 calories per sandwich


GREAT alfredo

8 oz. (about 4 cups) cooked egg noodles
1/2 cup butter
½ cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup shredded Swiss cheese
salt and pepper to taste

Cook noodles in boiling water until soft. Drain. In a small sauce pan, melt
butter. Add cream and heat through. Pour over noodles. Add cheeses, salt and pepper. Toss lightly until noodles are coated.

makes 4 servings. 671 calories each.

Island Chicken

About 12 oz boneless chicken, cut into small pieces
2 tbsp canola oil
1 cup crushed pineapple (8 ¼ oz can)
1 cup coconut cream (8 ¾ oz can)
½ tsp. lemon pepper

In a large skillet, saute chicken in oil until cooked and slightly browned. Add crushed pineapple, coconut cream, and lemon pepper. Mix thoroughly and simmer on low heat until sauce has thickened as much as desired.

Makes about 2 servings, each approximately 849 calories

Fettucini alfredo

1 (8ounce) package fettucini, uncooked
1/2 cup melted butter
3/4 cup grated parmesan cheese
4 tablespoons half and half
salt and pepper

Cook pasta according to package directions; drain well. in warm serving dish combine butter.cheese, half and half,salt and pepper. Add pasta to mixture. gently toss to coat all fettucini. top with parmesan cheese.

Yield: 4 servings
1 cup: 450 calories

Vegetable pizza

2 packages crescent rolls
2 ( 8ounce) packages cream cheese, softened
1 cup mayonnaise
2 teaspoons dry dill, crummled
2 cups chopped broccoli
2 cups chopped cauliflower
1 green pepper, chopped
2 tomatoes, diced and drained
2 meduim carrots, shredded

unroll and pat crescent rolls onto a cookie sheet to make crust. Bake at 350 degrees until light golden brown.Cool. Combine the cream cheese, mayonnaise, onion powder, and dill. Spread over cooled crust. Top with the broccoli, cailiflower, green pepper, and tomatoes. Place shreded carrots on top. cut in small triangles to serve.

Yield: 12 servings
1/2 recipe: 272 calories

Shrimp spread

8 ounces cream cheese, softened
1 small onion,diced
1/4 cup mayonnaise
1 (6ounce) can mini shrimp
1/2 tablespoon lemon juice
1/4 teaspoon garlic pwder
1/2 tablespoon worcestershire sauce
3/4 cup cocktail sauce

Mix all ingredients execpt cocktail sauce. Refrigerate for at least one hour. When ready to serve, mound cheese mixture in middle of plate. Pour cocktail sauce over the mound of cheese. Serve with a favorite cracker. (crabmeat can be subsituted for the shrimp.)

yield: 24 servings

Artichoke pizzazz

1 ( 14ounce) can artichoke hearts, drained and chopped
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 cup mayonnaise
2 tablespoons chopped green onion
1 dash garlic powder

Combine all ingredients and put in a 1 1/2 qaurt casserole dish or quiche pan. Bake at 350 degrees for 25-30 minutes. serve hot with a strudy cracker.

yield: 1 quart

Peanut butter round-ups

1 cup shortening
1 cup granulated sugar
1 cup brown sugar, firmly packed
2 eggs
1 cup peanut butter
2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 cup quick rolled oats

Mix the ingredients one at a time in order of recipe; mix well. place a teaspoon of mixture on cookie sheet. press with fork. bake at 350 degrees for 10-12 minutes.

yield: 6 dozen balls
1 ball: 85 calories

Double chocolate walnut brownies

1 cup (2sticks) butter or margarine
4 sqaures (4ounces) unsweetened chocolate
2 cups granulated sugar
3 eggs
1 teaspoon vanilla extract
1 cup sifted all-purpose flour
1 1/2 cups coarsely shopped walnuts
1 (6ounce) package semi-sweet chocolate pieces

In medium saucepan, melt butter and chocolate squares over moderate heat. Remove from heat. Gradually beat in sugar with a wooden spoon until combined. add 1 egg at a time, beating well after each egg. stir in vanilla. gradually add flour; mixing well.stir in 1 cup walnuts. spread mixture into a geased 9 by 13 by 2 inch pan. combine remaing walnuts with chocolate pieces; sprinkle over top of brownies, pressing down lightly. bake at 350 degrees for 35 minutes or until top springs back when lightly pressed with fingertip.

yield: 24 squares

Lemon bars

1 cup (2sticks) butter
2 cups all-purpose flour
3 tablespoons granulated sugar
2 (8ounce) packages cream cheese
2 cups powdered sugar
2 small packages lemon pudding and pie filling (not instant)
1 meduim container cool whip
chopped nuts

Combine butter,flour, and sugar like a pie dough. pat into bottom of jelly roll pan or cookie sheet. bake at 325 degrees for 15 minutes. cool. blend cream cheese and powdered sugar with electric mixer. spread on cooled crust.

yield:24 bars
1 bar: 236 calories

Kid pleasin' chocolate mousse

1 (6ounce) package chocolate instant pudding mix
3 cups cold whole milk
1 cup frozen whipped topping, thawed
12 cream filled chocolate sandwich cokkies, crumbled
8 cream filled chocolate sandwich cookies, whole

combine pudding mix an dmilk in a small mixing bowl; beat a low speed of an electric mixer until blended. beat at low spped an additional 2 minutes. fold in 1/2 cup whipped topping and cookie crumbs. spoon mouse in to 8 (6ounce) dessert dishes. cover and chille. Garnish each serving with a drop of remaing whipped topping and a whole cookie just before serving.

yield: 8 (6ounce) servings

1 large conatiner cool whip

prepare pudding according to packages directions. combine remaing ingredients with pudding and mix well. refrigerate until chilled. any flavor pudding may be used.

Well, I guess they don't HAVE to be healthy, I mean, a milky way cake isn't a major food group or anything either! But it probably should have some nutrition, not just empty calories.

Hay there I am new to this. My son who is 12 hates to eat just abt. anything that is high calorie. I would love to get your cook book when you get finished with it. I can try a few new things on him. I also was wondering if there are any <u>high calorie</u> cookbooks
out there all I can ever find is weightloss and low calorie cookbooks. thanks
