Hey, like most people know, I am creating a CF cookbook with recipes and stories for/about CFers. If anyone is willing to contribute, please email me at gwen.feeley@comcast.net (gwen dot feeley @ comcast dot net)

or post here.

Thanks!

Check out that website, Katie. Since they are on a website, you will probably need permission to publish them in your cookbook, but there are plenty of recipes on there!

My daughter Avery loves macaroni and cheese. She would eat it for every meal every day if I let her. Being a Home Economics Teacher, I would never allow this. I decided to come up with a cheese dish that would be loaded with different types of ingredients that she might like as well. Here it is:

Oodles 'n' Noodles of Cheese

Ingredients:
1 box of thin spaghetti noodles
1 Can of Cream of Chicken Soup
Six slices of bacon
1 Sweet Onion
3 medium sized chicken breasts
1 package of shreeded Monterrry Jack and Colby Cheese

Directions:
Boil noodles until done, drain, then set aside
Dice chicken then pan fry until done, then set aside
Dice onion then pan fry until carmalized, then set aside (can be combined with chicken when cooked)
Fry six slices of bacon and set aside
Combine above ingredients with Cream of Chicken soup and Cheese in a casserole dish and stir. Cover dish with foil and bake for 20 minutes in 350 degree oven.

Serves: 4 hungry people
