Something I have read about kidney stones:

This makes perfect sense to me since I have to take a lot of B-vitamins to stay well with CF and because so many of the drugs pwcf take depletes (or competes with) magnesium. Fevers, heat treatments, sweating at high rates -- all these things deplete B-vitamins.

I'm not a medical professional, but it seems to me that if you take the right vitamins to prevent kidney stones, you ought to be able to safely return to the healthy diet that worked so well for you before.
I don't eat a gluten-free, dairy-free diet so I can't help you with that question. I do eat less meat than the average american. Some of the stuff I eat is listed on my website.
