I have diabetes also and dairy is a great weight gainer for me. Here are my favorite things to eat....

Turkey sandwich / mayo
tuna fish sandwich
cheese ....pretty much any kind
cottage cheese
yogurt
hotdogs and mashed potatoes
steak umms and eggs
steak and baked potato ( butter and sour cream on the potato)
pork chops and mashed potatoes....mmmmmmmmm
Chicken rice or noodle soup
Swanson's canned chicken
Kashi Go lean bars ( Love the chocolate almond)
cashews
walnuts
Kosher Corned Beef

I once had a dietitician tell me if i ever needed to gain weight a good way to add extra calories and fat was to sprinkle Carnation instant breakfast in or on just about everything i eat. I have never tried that because if i need to gain weight i will just take extra insulin and eat more, which is what i have been doing lately.

I also ate a piece or 2 of pizza with extra cheese every day for about a month+ ( this was 6 years ago after losing quite a bit of weight while in the hospital) and it worked wonders for helping me gain weight. Dairy is very fattening, and the calcium is an added bonus.

I discovered flavored Blue Diamond Roasted Almonds at the grocery store last week. They come dusted with flavors, Vanilla Bean and Cinnamon Brown Sugar. Yes, it has sugar, but there is not very much compared to other foods. I find them sooo yummy! Much tastier than plain salted almonds. I can't stop eating them!

Healthy, high in good fats and protein too!
