mac n cheese pleeeeease!

Last Fall when we were in the City for a doctor's appointment we went to Macaroni Grill for dinner. Max only eats noodles with butter -- but of course he can't SEE the butter or he won't eat it. The waiter came by with the cheese grater and asked us all if we wanted cheese on our food and Max totally surprised us by saying yes. Ever since then I've had to get out the zyliss cheese grater that grates cheese very finely and start buying a wedge of parmasan (sp) cheese. He has it on spagettios, noodles, his hand.

Can't help you with high calorie mac and cheese, 'cuz he won't eat it anymore. When he did, I'd add oil to the water when I boiled the noodles. Added olive oil, butter & cream to the mix to pump up calories.

Frankly, I'd be concerned about the type of fat contained, and whether there are any veggies added.

It seems that some cheese fats are just as hard to digest as meat fats, but some vegetable fats are easier to digest. Olive Oil is actually a good oil to use, but I would think that adding too much butter would be too much fat to digest properly.

A question to pose is how his stomach aches, etc. are doing. Another question related to cheeze and mac would be whether adding broccoli had been done before, or worth trying. It seems that broccoli and cheese soup is a popular item these days. When I went to a restaraunt with my parents on my last visit to the states, they had broccoli and cheese soup, which I thought was pretty good. I also recall some recipe's had included broccoli in them, and perhaps while I was young, my mom added broccoli a few times to the cheeze and mac.

And, I like the idea of adding franks (chicken or turkey franks would be ok) to the mac...gosh, I'm getting hungry just thinking of it and I ate about a half-hour ago!

That made me laugh out loud because Vinny won't eat toast if he can see the butter on it. I have to let it melt in first. Ahh, toddlers...

Killer Mac and cheese

2 cups chicken broth
3 cups heavy cream
1 Tbsp. butter
1 Tbsp. olive oil
1 onion, chopped
3 cloves garlic minced
1 lb. pasta
2 Tbsp. Dijon or honey mustard
1.5 cups shredded sharp cheddar cheese
1.5 cups shredded gouda cheese
1.5cups shredded gruyere cheese
salt and pepper to taste
.5 cup grated Parmesan cheese

Preheat oven to 450 degrees and butter a 13x9" baking dish.
Bring the chicken broth to a boil in a medium saucepan and reduce to 3/4 cup over high heat. Bring the cream to a boil in another large heavy saucepan and reduce it to 2 cups. Don't skip this!!!


Melt the butter and olive oil in another large heavy saucepan and cook onions and garlic until clear and soft. Cook the pasta until done and drain.

Add the reduced cream and reduced broth to the onions, then add the mustard, cheddar, gouda and gruyere cheeses and whisk until melted and blended. Add the seasonings. Add the pasta and mix well. Spoon into the baking dish, top with Parmesan cheese, and bake at 450 degrees for 10-15 minutes. Makes about 4 servings, 1,000 cals each.

My mom has an awesome homemade Mac n Cheese Recipe and I know it is not thinning....lol...but it is yummy...My kids all like it...even Garran! I will email it to you.
