Quick easy dinners for CF kids and their family

Looking for some new ideas. We are so busy, with work, school, meetings, afterschool stuff. I need help with good dinners for my daughter with CF; without making us all fat!

Tried and true: We use alot of Barilla pasta that has the high protein, omegas with butter and parmesan. If I am organized, I will make a lasagna from scratch on the weekend for the weekday. Crock pot beef stew; crock pot chicken soup.


Pizza bagels(these are not healthy frozen processed)

steak with A1 sauce.

The problem is my kids like home cooked meals that are variety.

The other day I made Moroccan chicken stew(crockpot) and the whoel family loved it. I was shocked.

Can you tell I love the crock pot.

Ideas??????

There was a blog a year or so ago where someone comitted to using their crockpot everyday for 365 days in 2008 and the author rated each recipe. There were apparently some good ones and some horrible ones.

how bout a beef stroganoff dish in the crock pot? My mom used to make, or rather, attempt some dish of the sorts and she used beef stew chunks, onion soup mix, and whatever little liquid we had, weather it was cream or once even the flat soda cola left in the fridge *shrug* throw that on top of some egg noodles and it sure was yummy. Definitely my favorite crock pot dish.

Another one of my quick favorite meals was fried chicken with teriyaki sauce. Cube chicken, fry it with a little olive oil till brown on all sides and then coat with teriyaki baste or sauce then place on a bed of rice (instant rice works well too if you're crunched for time) throw in some broccoli and onions and you have a quick stir fry. I loved that as a kid. Still love it now. =) * as a side note, the smaller the chicken pieces the faster they cook.

Another quick (and very fatty) and tasty one is homemade alfredo sauce. Sauté some garlic and onions for about 5 minutes in some olive oil till brown then heat up some heavy whipping cream, add the onions and garlic, slowly stir in fresh parmesan cheese until creamy and smooth and you're done. The sauce can be made while the water boils and the pasta cooks. by the time the pasta is done, so is the sauce. If you want the actual measurements for the sauce PM me.

One of our staples (we JUST finished eating this tonight!!!) is Breakfast for Dinner. The girls have scrambled eggs (I make them separately so Em's can be fattened up) breakfast sausage, fresh fruit, waffles or pancakes and hash browns in LOTS of butter. They love it! They clean their plates and ask for more!

For myself, I make a quick 2-egg (Sometimes egg-white) ommlette. Tonight's had LOTS of spinach, tomatoes, onion and a bit of shredded mozzrella cheese. YUM. The omlette is big enough to fill me up and I can limit myself to just a bit of sausage and hash brown.

This is quick and easy to do, and pleases all of us.

More of our regular meals:

parmesean chicken (breasts coated in egg yolk, bread crumbs, parmesean cheese, and spices) with pasta - I do plain breasts for my self Em calls this "favy chicky"

stir fry beef with broccolli - I was surprised the girls liked this one...but they gobble it up!

stir fry veggies with teriakyi chicken - whole wheat pasta on the side (I boil the pasta in chicken broth and it's SOOO good- extra protein that way, too)

And everybody's favorite - spaghetti with meat sauce. Sometimes we'll do the frozen ravioli, instead.

None of this is very time consuming - we make meals ahead on Sunday when we can, or at least make part of it ahead...


My husband and I are both on a "health" kick - for the first time in our married life...so we are experimenting with ways to decrease the calorie count/fat in OUR meals, but use the same ingredients, basically, in everybody's meal. So far, since we got serious and put a "bet" on it, he's lost 30 pounds and I've lost 12. We're having a good time each bringing new recepies, and the girls are trying new stuff along with us!
