Help Raise $ For Research! Read This Page!!!!

Hi! Okay, so I posted a question asking for creative fundraising ideas in the Families section, and one of the awesome ideas I got (thanks, Carey!) was to get a recipe book together, with patients and/or patients' friends/family's favorite recipes and stories. So....I'm writing now to ask you guys if you'd like to submit YOUR favorite recipe and story. If you don't want to give me your story, that's fine, you can always just sign it (Carey's example was: From Mary Smith, proud grandmother of Ethan w/CF), something like that. Whatever you choose is fine. The recipes don't have to be for CF patients only; they can be recipes for any food! Thanks so much!

Yummy Barbeque Meatloaf

1 beaten egg
1/4 cup fine dry bread crumbs
1/2 cup bottled BBQ sauce
1 pound lean ground beef

1. Combine egg, bread crumbs and 1/4 cup of the barbeque sauce. Add beef and mix well
2. In a 2 quart rectangular baking dish pat in the meat mixture. Bake, uncovered, in a 350 degree (fahrenheit) oven for 40-45, or until the loaf's center measures 160 degrees on an instant read thermometer. Pour remaining BBQ sauce over top of loaf, bake an additional five minutes.

Hmm, I posted this somewhere else, but now I don't see it, so here goes. This is my favorite desert and it has TONS of calories for all the Cfers out there. It kind of like an eggless custard (I hate eggs so this is perfect for me).

Panna Cotta

1 1/2 tsp unflavored gelatin
2 tbl spoons cold water
3 cups heavy cream
1/2 cup sugar
1 1/2 tsp vanilla extract
1 cup sour cream

Put 4 individual ramakins or coffee cups in the fridge to chill. Sprinkle the gelatin over the water in a small bowl, set aside. Warm the cream, sugar, and vanilla over medium high heat, DON'T BOIL. Stir in the gelatin until it disolves. Cool for 5 minutes. Add sour cream and whisk until smooth. Pour into the ramakins/cups and put in the fridge for 3 hours to set up. Top it with whatever you like, pureed fruit, chocolate sauce, caramel, whatever.

what an excellent idea.

I don't know how much interest there'd be, besides from me, but you should consider including a vegan, or at least vegetarian section.

I'd buy a CF cookbook. Please make sure it lists calorie values, though! A complete "Nutrition facts" box next to each recipe, like on food labels, would be just dandy, if you could manage that. I hate counting those myself from the recipe.

Hey, I just saw that you only had 5 recipes so far for your cookbook, and I realized that this page wasn't so prominent on the Adults page anymore, which is what a lot of people read. So, everyone, POST YOUR RECIPES! My favorite:

Ham and Pierogi Casserole (this is yummy and delicious, and it can be really fattening depending on how you cook it, so its a good CF recipe)

Ingredients:
2 ham steaks
1 large yellow onion (this can be substituted with a different vegetable or omitted if you dont like onions)
Roughly 6 oz of egg noodles (this can be varied depending on how much you want)
16 oz of shredded cheddar cheese
One packet of instant garlic mashed potatoes (usually they come two packets in a box)
About a stick of butter (unless you want to use less, then you only need 1-2 tablespoons)
2/3 of a cup of milk (it may differ depending on what brand of mashed potatoes you buy, so just read the directions on the box)

Peel the onion and chop it up into small pieces.

Put the water, butter, and milk into a pot for the mashed potatoes. Follow the directions on the box. After the water, milk, and butter come to a boil, take it off the heat. Add the potato flakes, and stir. Let it sit and thicken.

Boil water, and cook the egg noodles in it. Once the water hits a rolling boil, you want the noodles in there for 8-10 minutes. If you wish to use less butter, put the chopped onion in this water to boil it.

If you want to use the extra butter, melt what's left of the stick butter in a pan, and then put the chopped onions in the melted butter and sauté them.

Cut up the ham steaks into little bite-size cubes (I cut around the hard skin on the outside and throw it out. If you wish you can do the same, or leave the skin and use it in the dish).

Get a Pyrex glass dish roughly 10 x 10, though size can easily vary. Just make sure not to go too much smaller than 10 x 10. Preheat the oven to 400 degrees.

After the noodles have boiled for 8-10 minutes, drain them. Put them in the bottom of the Pyrex dish. If the onions were boiled, put them in at the same time as the noodles. If they were sautéed, add the onions and butter on top of the noodles. On top of that, put the cubed ham steak pieces. Mix so that the noodles, onions, and ham are all blended together.
Take the mashed potatoes and spread them in an even layer on top of the noodles, onions, and ham. On top of that, spread the shredded cheese. You can use less than 16 oz of cheese if you wish, as it creates a pretty thick layer. I use 16 oz because I like lots of cheese. Cover the dish with aluminum foil. Heat for 20-30 minutes until cheese on top is all melted and bubbling.

I just read this recipe, and it sounds delicious!

Mac and cheese with bacon
makes 2 servings

1/2 cup grated monterey jack cheese
1/2 cup grated sharp Vermont cheddar cheese
1/2 cup grated mild New York cheddar cheese
1/8 cup grated Parmesan
1/2 cup heavy cream
1 tablespoon unsalted butter
2 cups elbow macaroni, cooked al dente
1/2 cup chopped cooked bacon

In large frying pan over medium heat, combine first six ingredients, stirring for 3 minutes, or until cheeses are melted and smooth. Reduce heat to low and add macaroni and bacon to mixture. Stir for four minutes or until macaroni is evenly coated. Meanwhile, heat broiler. Pour mixture into greased ovenproof serving crock. Broil 2 minutes or until cheese is bubbling and golden brown. Remove from broiler and sprinkle with freshly ground pepper is desired.

I posted this in the Off Topic thread but I will do it again here. Tjis is one of my fav recipes!!

MONKEY BREAD

3 packages of buttermilk biscuit tubes
1 cup sugar (divided)
2 tsp cinnamon
1 cup butter
1/2 cup brown sugar

Take 3 packages of buttermilk biscuit tubes (10 per roll) and cut each roll into 4 pieces. Drop roll pieces into 1 cup sugar and 2 tsp. cinnamon. drop sugar coated pieces into a well buttered bundt pan (don't squish roll pieces when placing them in the bundt pan).

Put 1/2 cup of the left over sugar/cinnamon mix and 1/2 cup packed brown sugar and 1 cup of butter (2 sticks) into small sauce pan.

Bring this mixture just to a boil, take off heat right away. Carefully drizzle over the roll pieces.

Bake at 350 degrees for 30 min.

Cool slightly in an upright position, then tip pan over onto a plate to remove monkey pull-apart bread.
