I feel that eliminating cheese will add to the anti inflammatory benefits. Dairy products (even organic dairy products) creates more mucus. More mucus equals more inflammation. If you eat too many dried fruits watch out! Healthy sugars add to inflammation.

I agree on both counts!! I only eat small amounts of goat cheese.... And, I eat low glycemic fruits like honey-dew, caneloupe, kiwi, frozen berries, (but only 1/4 cup at a time) aplles, pears, the occasional orange..grapefruit.

One thing I did find out is that while on the diet my Vitamin c level in my blood dropped...significantly. Since vit c is a vital anti-oxidant, I decided to supplement. While I do take a vit c supplement, I feel like eating citrus fruits in moderation is very important. Vitamin c is water soluable and therefore can vary throughout the day. We tested it 2 times at different times of the day, so I felt that I needed to increase my intake of citrus. I eat tons of spinach andthe like...not really helping. So, vit c in fruits in moderation.

I agree with the whole anti dairy thing. I feel so much better when I don't have as much dairy. The problem is I LOVE milk. If I could I would easily have at least a half gallon a day.

What can I drink if I don't have milk? Juices are too high in sugar for me, I don't like carbonation so I need some ideas.

Great topic...we also follow an anti-inflammatory diet with our son...actually the whole family is on it since I can't cook 4 different things. I feel the 3 whites have the biggest impact - white flour, white sugar, milk for most people. These are often hidden food allergies for many people as well (food sensativities do not necessarily show obvious allergy type symptoms but may include depression, moodiness, PMS, headaches, irritability, bowel issues, inflammation). I found by eliminating them we have all been healthier. The other approach we are taking is NAET allergy elimination technique. I am the current guinea pig and will let you know how it goes if anyone is interested.

We eat very much the same way Drama listed above and we do not have issues adding calories to our cfers diet with other creative methods. We also feel eating as much organic stuff as possible and doing mostly whole foods (avoid too much packaged goods) as also helped alot. When he needs to gain, we use smoothies (since he can't do dairy we use rice/almond/goat milk) in many flavors. Coconut milk is wonderful lightly sweetened with agave nectar which is low on the glycemic index or blended with a banana and cinnamon. These drinks can be made reallly quickly with a hand blender type thing and will have no corn syrup and crap in them. It is fun to play around with coconut oil for cooking and even drizzled on stuff.

Their are some goat milk and rice protein powders for adding to drinks and meals if you really need it...be aware of your protein requirments though as too much can harm kidneys and may increase weight loss (I believe it is called ketosis). I'd try and look for organic, non-gmo version of any powdered protein if possible.

Ben had 2 little colds this year and the rest of us had just one. This way of eating has changed our lives in a pretty big way. My extended family has applied some things and found the same results.

Other anti-inflammatory support we give to our cfer is tumeric, DHA, GSH, and probiotics each and every day as a preventative. We just started tumeric and it has done some amazing things for his stool consistency.

I'm on a weight gain diet right now, and they sent me some shakes and suggested carnation shakes as well. Well I'm very concious of what I eat, I don't like anything with artifical sweeteners....and those are loaded with them.
For a shake 2x a day I do this instead:
2 cups of organic whole milk, but you can easily do soy or goat with the same amount of calories
handful of strawberries
1 scoop vanilla spirutein protein powder-it has spirulina, whey protein, vitamins, fiber and sea kelp...trust me, it is good it tastes just like carnation!
one organic yogurt
blend it up-yummy!
Its about 580 cals.

Ensure Plus tastes delicious, is filled w/calories and is lactose free.

These foods all sound wonderful, but I am 93 pounds (I'm 5'1) and have to gain a ton for transplant. My doc tells me to eat all the pizza and McDonalds I want (though I do hate fast food). I'm thinking that maybe this diet is something to consider post-tx for me. Good to know about.
