Foods that are good for working out but not losing weight

I'm trying super hard to get fit at the moment, have taken up running, and am swimming twice a week. I'm in the early stages but I'm worried I'm going to lose a lot of weight. I want to take something along the lines of scandishake but I've read that that is mostly sugar really.
Has anyone any suggestions for what I could do? I'm a full time student so I don't really have time to be eating meals all through the day, but I'm worried I'm not getting in enough cals. here is my diet at the moment:
Breakfast: Two slices toast with butter/jam, a fried egg, bowl of cereal, tea and an orange.
Lunch: a small sandwich or a 6inch subway (!)
Dinner: usually a stir fry or fish and fries
Evening snack: fruit.

You're going to get all sorts of advice on this one. These are some things I found. Trust me I understand not being able to eat all day long however these are things I can carry in my pack as snacks.

Peanut butter pretzels or peanut butter pretzel nuggets
Those packaged cheese and cracker things
Ensure works but I like boost better
At GNC you can get Wei protein, add whole milk not water, hell you can add just about anything to it
ZONE bar's "Zone" is the brand name best one I've had yet.
They make avocado chips, there a good snack.

I really am not going to go into it too much because every time I do no one seems to listen. So I'll just say this.... WHOLE FOODS. (no not the store). Also healthy > school.

Nuts, fruits, whole grains, meats, veggies.

I can't speak to the malabsorbtion of CF, but I also exercise a lot and am trying to gain weight. I impression is that you have to work to take in more than you burn--period. That means eating more than your brain/stomach feels you need to and more often. Eat a great meal, then eat a granola bar after you are full. Eat a plate of dinner, then have a pb&j sandwich.
The only time I ever really have been able to gain weight is while on vacation at the beach each summer. My mother-in-law does a lot of the cooking, we go to restaurants, and I generally pig out because it's the vacation culture: I eat a dinner's worth of cheese, olive tapanade, guacamole between 4 and 7 pm and THEN eat a huge (sometimes lobster yum) dinner, followed by farmer's market pies and ice cream, AND several beers. I usually put on 3-4 real pounds (not water, PMS) over the course of three weeks.

Oatmeal is a good one, it's a healthy grain (as long as you don't get the sugary kind). Personally, I like to get plain oatmeal and put fruit in it for my sweets. Mangoes are good, so are bananas and/or strawberries. You could do Kiwi, although I haven't tried that one yet.

Sometimes I will do dried fruits or a dried fruit mix.

I also agree with avocado /guacamole. It's a great source of healthy fats. So are pistachios if you can afford them (expensive little buggers). I just ate an entire pound of them last week.

Pita with hummus is another favorite snack of mine, which is not very expensive (especially if you make the hummus yourself)

My advice - read the book called The Primal Blueprint by Mark Sisson. He details how to get fit and guess what it does not include - excessive cardio - mostly lots of slower movement (ie walking) occasional sprinting and the final is lifting heavy things (weight lifting). He also details what to eat and what to avoid. You have to keep your carbs up with WHOLE foods like Incomudrox said (veggies and fruits) and eat lots of protein and fats. You need a minimum of .5 grams of protein per lb of lean mass. And you should be getting about half your calories from GOOD fats (animal fats, olive oil, avocado, coconut oil, and palm oil)

Thank you for your replies, I will look into all those suggestions. I'm diabetic too so I will need ot factor that in. Whole foods seem interesting!

Also to the poster who said health > school (I can't see who it is when I'm replying), I totally agree with you, however I am already very healthy so it's not a case of prioritising school over health. I'm training for a 10k hence wanting to maximise my fitness, which I figure will be a bonus <img src="i/expressions/face-icon-small-smile.gif" border="0">
