Melted my first neb piece

Its funny because I hate electric stoves for the lack of control issue. I love my gas stove & have no problems. The only thing I have melted was a face mask. I guess I became too paranoid to let anything else happen!

It's safer to bring the water to a rolling boil then add the neb pieces (like with spaghetti) then turn the burner off.

Gas stoves emit traces of nitrogen, which is something we lung-compromised folks should be careful of. If your stove has a hood, be sure to turn that on "high" as well so that the gases from the burner will go up to the vent hood, and not spread themselves throughout the home.

If you have a double boiler, or a steamer that rests in your Dutch oven (the largest, deepest pot) that's safer to use because it will result in less likelihood to melt the nebs or burn yourself. Also, since steam is only a short transition away from the gaseous state, you'll have an easier time making sure the nebs completely dry.

I boiled an entire 8 quart pot of nebs (6 or 7 nebs) down to a big plastic blob, basically<img src="i/expressions/face-icon-small-blush.gif" border="0"> the first time I melted any! (Do I get a prize? LOL).

Now, I always put a lid on it, set the timer for 17 mins (well, most of the time <img src="i/expressions/face-icon-small-wink.gif" border="0"> ), and try to remember to turn it down from High to Medium (barely boiling) after it boils (about 6-7 mins). So far, so good... If you have a gas stove, I would try turning the heat down a bit so the flames stay totally under the pot and use the biggest pot you have, and see if that helps.

Putting a lid mine has been a "neb saver" for me if I forget to set the timer, though <img src="i/expressions/face-icon-small-wink.gif" border="0">.
