What kinds of things do you all do to add calories and fat to your diets or your children's diets?

I need serious help getting my 5 year old daughter to gain some weight!

Cream in milk
I bake noodles in cream and butter with Velveta for home made high calorie mac and cheese.
Coconut oil in almost everything
I make grilled cheese for my 2 year old and butter both sides of the bread
Add extra cheese to food
I use alot of alfredo sauce as well, she will eat it off the spoon
My daughter really likes dipping things in Mayo
We add mayo to noodles and soup as well

We were giving our daughter meal replacement shakes a couple times a day as a snack. That worked so well that the nutritionist bumped her down to one a day.
We also put salted butter, cheese and/or ranch dressing on everything. She loves fruit, so I sprinkle it with cinnamon and sugar.
It's hard somethimes to maximize calories when everyone else is trying to reduce them. Not too long ago at a Smoothie place I asked for a little weight gain to be put into Reagans smoothie and they wouldn't do it. I explained that she had special nutritional needs, but still a no. I understand their reasoning behind it, but surely they could see that my 17 month old was no weightlifter in training. lol.

My husband loves Scanishakes and Ensure! They come in different flavors. Peanut butter and honey sandwiches also help him gain.
