My kids are always snacking--I keep food/snack at eye level for them and they just get whatever they want whenever they want.
One of my favorites is small salted pretzels (or even big soft pretzels) with cream cheese. You could leave out the cream cheese for those who don't need the extra fat. We even pack this snack in their lunch boxes from time to time. They love them!
My girls eat a lot of buttered and salted popcorn (leave out butter and salt for those who don't need it) and tortilla chips with cheese to dip them in. They like flour tortillas filled with cheese and popped in the microwave for a few minutes also.
My girls eat a lot of soups for snacks. Not high in fat, but it's something they enjoy. My girls love mashed potatoes. They actually prefer Idaho Potato Buds over the real deal. So, they are fast to make and I add a lot of extra butter. Sometimes they add some cheese and bacon bits. When I make them, I make a large bowl of them and keep them in the refrig for easy snacks.
My girls love black olives-salty and high in fat. They will eat an entire can b/n the two of them. They also love yougurt, pudding, and cheese sticks.
Both of my girls LOVE fruit. Not high in fat, but it's calories. Hannah loves to spread her apple slices with white cake icing and then puts little mini marshmellows on top of that.
I completely understand the difficulties with keeping the kids weight going up while trying to keep the rest of the family's weight under control! Not an easy task.
