What do you do?

Thanks for all your responses. Us CFers are such a diverse bunch. dbtoo, I will share recipes, but I must warn you that I am a vegan, so I don't have any recipes with meat, eggs or dairy. Are there any other vegans on here, btw? I have CFRD also and I find that being vegan is helpful in controlling blood sugars. Granted I have to eat a lot of food, because I eat mostly vegetables and tofu, but I don't mind so much as I really like to eat.

Valerie,

Do you mind sharing how much you weigh? Are you pancreatic sufficient? Do your doctors hassle you about your vegan diet and weight?

The reason I ask is my daughter lost some weight over the last year (she had many legitimate reasons, including PA infection and the discovery of wheat allergy) Anyway she also discovered that she cannot tolerate potatoes and needs to eat low sugar so her diet changed quite a bit. The nutritionist and CF doc are very skeptical and keep telling her she needs to return to a "normal diet" but she knows what she can eat and what she cannot. She adds calories wherever she can (protein shakes, and wheat free bread) but without wheat (yummy pasties, cakes etc), Sugar (yummy almost everything) and potatoes (fries and chips) she just doesn't consume the calories that she used to. We really struggle to get the calories without the sugar.

Valerie,

Although I don't have CF - My Dad died of the disease back in August, I feel I can help you out with this question: You mentioned that you want to be a chef. I am the Director of Culinary Admissions at Johnson & Wales University and I've had a few CF students come in and complete our programs. There are so many different opportunities in this industry that it doesn't have to be just working on a line. We have alumns that are dieticians, food product developers, personal chefs, food writers, food stylists, the list is endless!

Welcome to the Board and I hope to see you around!
