Celiac vs poor response to enzymes?

Brandon has always had a lot of pancreatic issues. I knew from the start with him he had a milk allergy he does soy now.they tested him and i was right about the milk allergy. they tested him for celiacs and it came back negative, but i didn't know at the time that they have to be consuming wheat for it to show and he pretty much rejected that kind of food anyway. when they told me about it I research and realized it sounded a lot like him and I so we went on a stricter gfcf diet and he improved as well as I. I think that we both have a wheat intolerance and milk allergies. He is on Creon and generally takes near double the recommended dose for his age and weight. I have done a lot of work with him, he also has texture issues, so really he has many road blocks to make him loose weight but I find ways around it and he continues to gain.
