Quick easy dinners for CF kids and their family

thanks! I had no idea how to spell it! Maybe you could add cabbage to yours? Whats that mythical diet out there, the "cabbage" diet?! haha

Or just add more vegetables? Not sure though what else would be good with that taste.

Tami -- I buy the kielbasa when its buy one get one at our grocery store. I'll buy a low fat turkey one for DH, my oldest and I and then a full fat beef one for Alyssa and Reese.

I make boneless pork ribs using "country style" lean pork meat and then a little bbq sauce in the crockpot on low for 6 hours and they are super tender and yummy.

My kids are willing to try just about anything, so experiment all the time. I'll throw dry rice on the bottom of a casserole dish, add in chicken broth, some skinless chicken breasts (halves) some veggies (mushrooms, onions, broccoli, peppers, garlic artichoke hearts or whatever I have). I'll cook for awhile. About half way through, I'll use whatever I have (chip dip or cheeses/soups/sour cream work great) and stir in to add flavor. Before I serve Alyssa's, I mix a little extra cheese or sour cream in with the rice. No one notices.


I also make a killer pot roast in the crock pot -- on top of the meat add 1cup ketchup, half cup balsamic vinegar, and half a cup of brown sugar, salt and peper and then water to cover the meat. I cut in onions and carrots. To make it a full meal, you can throw in some peeled potatoes.

Pretty much everything I make, Alyssa gets with extra cheese, sauce, butter or sour cream. Lukily she LOVES all those extras!!!

I usually combine the soup and gravy together and then mix it with the meat. (my mom mixes the dry gravy mix with the meat but I think it's much better when you actually make the gravy) It will be a little liquidy, but it'll be yummy once it's all cooked together <img src="i/expressions/face-icon-small-smile.gif" border="0">
That's the first layer, into the bottom of a casserole dish it goes.
The next is a vegtable of your choice... We do frozen corn (I know it's technically a starch, but it's our favorite in this dish). I throw it on top of the meat frozen b/c it'll cook later when you put it in the oven.
Use a couple cups of your veggie, enough to cover the meat thoroughly, then put a couple pads of butter and a sprinkle of salt and pepper.
The last layer is mashed potatoes (real or instant, instant is soooo much easier and there's enough other things going on in the dish that no one will know)
You want a good layer of the potatoes as well.
Cover the potatoes with shredded cheese (I use mexican cheese but you can use whatever kind you like) and put in the oven for about 20-30 minutes until the cheese is all melty!
My 2.5 DD will eat 2 bowls of this @ one sitting! She runs around the house saying "Pie, Pie, Pie!" I can't cook it fast enough. It's hysterical!
It's something you could put together over the weekend and cook during the week if you know you're gonne be busy or make extra and have leftovers for a couple days. I would suggest cooking it a little longer if you make it before hand because everything will be colder after sitting in the fridge. My DH says that this is one of those dishes that the leftovers are better that the first time you eat it!
I can't say that this is weight friendly for the non-CFer's in your family, but it's a yummy comfort food and it's a great meal for your CFer!

I bought the Fix it and Forget it Crockpot recipe book. Found it for $3.50 at one of those close out places, what a bargain! Very excited to look through it.

This weekend was a big eating weekend. Maggie had Fish and chips out to eat the other night, ate all the fried fish..Also, had salmon and rice a different night, I can tell the weight is starting to come back; though for me too, unfortunately.
