Tami -- I buy the kielbasa when its buy one get one at our grocery store. I'll buy a low fat turkey one for DH, my oldest and I and then a full fat beef one for Alyssa and Reese.
I make boneless pork ribs using "country style" lean pork meat and then a little bbq sauce in the crockpot on low for 6 hours and they are super tender and yummy.
My kids are willing to try just about anything, so experiment all the time. I'll throw dry rice on the bottom of a casserole dish, add in chicken broth, some skinless chicken breasts (halves) some veggies (mushrooms, onions, broccoli, peppers, garlic artichoke hearts or whatever I have). I'll cook for awhile. About half way through, I'll use whatever I have (chip dip or cheeses/soups/sour cream work great) and stir in to add flavor. Before I serve Alyssa's, I mix a little extra cheese or sour cream in with the rice. No one notices.
I also make a killer pot roast in the crock pot -- on top of the meat add 1cup ketchup, half cup balsamic vinegar, and half a cup of brown sugar, salt and peper and then water to cover the meat. I cut in onions and carrots. To make it a full meal, you can throw in some peeled potatoes.
Pretty much everything I make, Alyssa gets with extra cheese, sauce, butter or sour cream. Lukily she LOVES all those extras!!!
