We had a small wedding -- didn't have an engagement ring, just simple gold wedding bands, I used my mother's wedding dress and my two bridesmaids wore similarly colored dresses, which were from previous engagements. We'd talked about eloping, but knew it was important to our families to have a wedding, which they could all be a part of.

Most of our friends have had informal weddings -- either at a wedding chapel or church, followed by an open house/potluck afterwards.

I had a small wedding with only close friends and family. Here's what I did--

~I rented a pavillion at a park. Cost me $50
~We got platters (meat and cheese, veggie and fruit and 2 litter bottles of soda) Cost me $75 (you can shave off money if you make it a pot luck or if you tell everyone that any monetary gifts would be appreciated and will help with the cost of the wedding)
~One of our friends was in culinary school at the time, so he made our cake for free.
~Another friend of ours DJed for us.
~I bought me dress off the rack at JC Penny, perfect for an out side wedding! Cost me $57

Instead of a diamond you could always ask for just a gold band...maybe platnuim or silver depending on your taste?
