What to feed a 1 yr old?

I wish I had as many choices as you guys have when it comes to feeding my little guy. He has casein allergies and can have absolutely NO dairy in his diet. Not soy, not goats milk, nothing.........very rare I know, but we have been on the "rare" side of everything lately<img src="i/expressions/face-icon-small-confused.gif" border="0">

So, I am always looking for new ideas when it comes to feeding time.....he is still on formula (EleCare-just switched to vanilla flavor) and baby food #3. I also give him ice cream cones minus the ice cream (certain brand), crackers, Jell-O, bananas, rice, French fries, and he loves chicken strips from Papa Johns. He will also eat soft diced carrots, green beans, baked beans, and corn. Of course everything is prepared without dairy, which makes it difficult to add in those extra calories.

I am definitely interested in this thread so I will check back often. Hopefully I'll get some more ideas for my son to eat as well.

We do lots and lots of chicken nuggets, too. Buy them in bulk. Also, I forgot to add in my last post that Emily loves the Dannon drinkable yogurts. I think they are called Dannimals. She drinks two of them with her breakfast. I add in a tablespoon of Duocal...it comes to about 200 calories. She also loves breakfast sausage of any variety. And scrambled eggs...with butter. Ore-ida makes a crispy french fry that is pretty high on caloires. We have those every once in a while.

Sherry...I feel for you. Not being able to rely on dairy to get extra calories would be so hard! I hope you get some good ideas here.

When my daughter was younger I made philo dough pockets quite a bit. You put butter between each layer of dough so they are loaded with fat. I filled them with chicken pot pie filling and just cut up the chicken really small she loved them!
